Born from the vision and commitment of two Italians, Enrico and Nadia Baldin, Champagne Encry is produced only from vineyard parcels located in Le Mesnil-sur-Oger, a Grand Cru village located in the heart of Côte des Blancs.  Enrico has always been in love with champagne, even though his main business is bioengineering and environmental restoration. Enrico has gained experience in using a system called " hydroseeding", a process that entails the usage of special blends of natural products, including a mix of selected seeds to restore the original habitat. This cultivation technique has been applied to these Champagne grape vines and has led Enrico to start the Encry project.

The grapes are harvested from a vineyard at the top of the hills in the western part of the village, preserved and cared from generation to generation by a local family of vignerons. The vineyard is managed as naturally as possible and benefits from drier soil relative to the valley floor, meaning minimal copper can be used. The vineyard is never plowed, meaning the ground between rows is covered in grass, and insects are managed using sexual confusion instead of chemical pesticides.

The base wines are vinified in thermoregulated stainless steel tanks, and are not permitted to go through malolactic fermentation.  The non-vintage cuvées are enriched by the addition of around 20% reserve wines held back from the best years. The name, "Encry", derives from the nickname given to Enrico "Enry" and the letter "C" meaning "Champagne". The Maison aims to create an elegant and refined champagne with the prestige of a Grand Cuvée.
