Cantina Giovanni Ederle is owned and founded by its namesake, the young Giovanni Ederle, a native of the Valpolicella area. Giovanni and his sister, Camilla, grew up among the vineyards and farms of the region. The self-described ‘black sheep’ of a family of lawyers—an old family that came to Verona 130 years ago-- the siblings decided to dedicate themselves to the land, instead of the law. While Giovanni is the owner and winemaker, Camila Ederle focuses on running the old family agriturismo, which dates from 1984.

Giovanni’s property sits within the Val d’Illasi, distinct from the Valpolicella Classico zone. Just a short drive from downtown Verona, the vineyards and estate overlook the city. There are about six hectares of vineyards and fifteen hectares of olive groves. Giovanni farms all his vineyards organically. Organic conversion began in 2012, and they have been certified since 2016. In keeping with his more naturalist philosophy, Giovanni chooses to dry farm his vineyards, whereas most estates in Valpolicella choose to use irrigation. In the cellar, he employs a light touch, preferring less manipulation, less new oak and always relying on naturally occurring indigenous yeasts for fermentations.  

Having not come from a winemaking family, Giovanni has had to create his own path with his winemaking. Through trial and error over the years, the result is a range of wines that express both the terroir of the Veneto as well as Giovanni’s own sensibilities. He prizes food-friendliness, elegance, and freshness in the wines he makes over more bombastic styles. This sensibility is the hallmark of Cantina Giovanni Ederle.
